Honey has been cherished for thousands of years—not just as a natural sweetener but as a healing food. Ancient Egyptians, Greeks, and Chinese civilizations prized honey for its medicinal and preservative qualities. Archaeologists have even discovered pots of honey in Egyptian tombs that are still perfectly preserved after thousands of years.

Raw, unfiltered honey is honey in its purest form. It’s not heated or strained, so it retains all the natural enzymes, pollen, antioxidants, and beneficial compounds that make honey such a nutritional powerhouse. Unlike processed honey, which is often heated and filtered to improve shelf life and appearance, raw honey keeps its full flavor and health benefits intact. One natural characteristic of raw honey is crystallisation. This occurs when the natural sugars—glucose and fructose—form crystals over time. Crystallised honey is still perfectly good to eat and even easier to spread! However, if you prefer it smooth, gently warm the jar in a bowl of hot water (below 40°C) until it returns to a liquid state. Avoid microwaving or overheating, as this can destroy the beneficial enzymes.  To slow down crystallisation, store your honey at room temperature in a tightly sealed jar away from sunlight. But remember: crystallisation is a sign of high-quality, raw honey—not spoilage.
